What you need for the cupcakes:
- 100 ml sun flower oil
- 90 g fine granulated sugar
- 2 eggs
- 200 g mixed berries, (mashed)
- 180 g flour
- 1/4 tbsp baking powder
What you need for the buttercream and decorations:
- 300 g icing sugar
- 80 g butter
- 1/2 tbsp cooking cream
- 3-4 tbsp strawberry or raspberry syrup
The Cupcakes:
- Pre-heat the oven to 180°C
- Mix the oil, the sugar, and the eggs in a bowl till it becomes a smooth mixture. Mix the berries through the mixture.
- Mix the flour and baking soda gradually with the mixture till everything is absorbed.
- Put the mixture in the vorms/tins
- Put the cupcakes in the oven and let them bake for about 20 min. till the cupcakes are risen and and feel firmly
- Leave the cupcakes to cool down for about 5 min.
The Buttercream:
- Mix the butter in a bowl till it becomes soft
- Mix the sugar with the butter, add the cooking cream and mix the mixture till it is smooth. Mix the syrup with the mixture till it becomes creamy.
The Decoration:
- Put the frosting in a piping bag and pipe the frosting onto the cupcakes.
- Decorate with berries and a mint leaf
