What you need for the cupcakes:
- 225 g flour
- 110 g fine granulated sugar
- 2 tsp bakingpowder
- Pinch of salt
- 1 egg (mixed/whisked)
- 150 ml milk
- 50 ml sunflower oil
- 1 tsp vanilla flavour
What you need for the icing and decoration:
- 200 g icing sugar
- 2 tbsp lemon juice
- water
- sprinkles
- snowflake decorations
- 12 mini-marshmallows
- red and blue marzipan/fondant
The Cupcakes:
- Pre-heat the oven to 200°C
- Put the flour the baking powder, the sugar and the salt in a bowl
- Mix the egg, the milk, the oil and the vanilla flavour in a different bowl
- Add both mixtures together and mix till all the ingredients are mixed
- Put the final mixture in vorms/tins. Bake the cupcakes 20-25 min. till they are gold brown and have risen.
- Let them cool down
The Icing:
- Put the icing sugar in a bowl and mix it with lemon juice. Add water to it and mix it till it becomes a thick liquid
The Decoration:
- Put the icing on the cupcakes
- Put sprinkles on to make a hat
- Put snowflake decorations on to make the edge of the hat
- Put a small marshmallow in the middle to make the nose
- Make the eyes and mouth out of red and blue marzipan/fondant
