What you need for the cupcakes:
- 80 g butter
- 1 egg
- 175 ml yoghurt
- juice and graded peel of 1 lime
- 250 g flour
- 1 tbsp bakingpowder
- 150 g fine granulated sugar
What you need for the buttercream and decorations:
- 225 g butter
- 400 g icing sugar
- 1 tbsp lemon juice
- 1 lemon
The Cupcakes:
- Pre-heat the oven to 180°C
- Mix the butter, the eggs, the youghurt, the lime juice and the grated lemon peel in a bowl
- Put the flour, the baking powder and sugar in the bowl as well and mix it together.
- Put the mixture in the vorms/tins. Put the cupcakes in the oven and bake them for about 25 min. till they are golden brown and have risen.
- Let the cupcakes cool down
The Buttercream:
- Mix the butter in a bowl till it is creamy
- Mix the icing sugar gradually with the butter and also add the limejuice
The Decoration:
- Spoon the buttercream into a piping bag and pipe the buttercream on the cupcakes
- Cut the lime into slices and put one on every cupcake
